Chicken Satay Skewers!

We apologize for not posting any recipes during the weekend, I guess life really caught up with us! So to make up for it, today we’re posting one of Singapore’s favorite appetizers: Chicken Satay! Recently it was shown in the movie “Crazy Rich Asians” but honestly we can do better than that!

I definitely made plenty of these growing up during the festive season, it surely brings a lot of nostalgia back and we’re excited to share this recipe with you!

Chicken satay skewers with peanut sauce
Lip smacking deliciousness

Ingredients:

  • 4 medium-sized chicken thighs or chicken breasts ( personally dark meat would taste much better! ), diced into small chunks.
  • 1 cucumber cut into small pieces
  • 1 small onion quartered
  • 1 bird’s eye chili or small chili, diced.
  • Some Oil to baste for grilling

Marinade:

  • 3 tablespoons oil
  • stalks lemongrass white parts only
  • 2 cloves garlic peeled
  • 6 shallots peeled
  • 2 teaspoons turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • 1/2 tablespoon salt or to taste
  • 2 tablespoons sugar

Cooking Directions:

  1. Get a food processor or blender and add in all the ingredients for the marinate and blitz until smooth, if it’s too thick, add a splash of water and blitz again until you achieve your desired consistency.
  2. Get a large tray lined with paper and dip each chicken piece into the marinade and transfer it to the tray. Let it marinate in the refrigerator 6 hours or best overnight.
  3. When ready to grill, get your bamboo skewers ready and thread the chicken, be careful not to overcrowd the skewer and leave some empty space so you’re able to turn the skewer when grilling. Baste and brush oil while grilling.
  4. Combine the chili, onion, and cucumber in a small bowl.
  5. Once the chicken satay has cooked, remove and serve hot with the cucumber mixture.
  6. Enjoy!

A Singaporean staple that’s definitely found at every barbecue! We recommend you try it out at your next cookout! It does not have to be restricted to chicken too! Beef, lamb, and pork all tastes amazing as well!.
