Cinnamon Shortbread Cookies

Hey Everybody!

Cookies! Who doesn’t love them or rather love to eat them? 😉 I’d say that a good old fashioned chocolate chip cookie still reigns king, however, some cinnamon shortbread cookies are a close second!

Cooking Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 1/2 cup golden brown sugar, packed
  • 2 teaspoons cinnamon
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup of cinnamon sugar

Cooking Directions:

  1. Get a large mixing bowl and add in the butter and sugar, beat until light and fluffy using a balloon whisk, or you could use an electric mixer as well, though it wouldn’t be as good of a workout 😛.
  2. Add in the cinnamon and beat to combine
  3. Add in the flour and salt, and beat until the dough starts to come together.
  4. If the dough is crumbly, use your hand to gently knead it until it comes together.
  5. Put the dough in a gallon sized freezer bag and put it on a flat surface.
    Leaving the top open, use the bag as a guide to roll the dough into a 9 x 10 1/2 inch rectangle. It should be about 1/4 inch thick.
  6. Seal the bag and refrigerate the dough for at least one hour.
  7. Preheat the oven to 150°C and line 2 baking sheets with parchment paper.
  8. Use a cookie cutter to cut out shapes from the dough, and place them on the lined baking sheets.
  9. Sprinkle them with additional cinnamon sugar and bake for 18-20 minutes, until they are just lightly golden but not browned around the edges.
  10. Cool completely on wire racks.

Great for afternoon tea and a good Netflix TV series :P, I’ll admit I’ve been through many Netflix and Cookies sessions and I’m not ashamed :P.
