Homemade Coconut Ice Cream!

Hey Everybody!

I’m pretty excited to share this recipe after trying it out myself! And the unbelievable part is that it only takes 5 ingredients for the basic Coconut Ice Cream itself!

2 scoops? Make it 3, I’m not driving ;).

Let’s get to it!

Cooking Ingredients:

  • 1 1/2 cup canned coconut milk
  • 1/2 cup additional coconut milk OR milk of choice
  • 1/4 cup of Stevia or any sweetener of your choice
  • 1/8 tsp salt
  • 1 1/2 tsp pure vanilla extract
  • OPTIONAL: Raw coconut cut in half and juice, flesh scooped out to make a “bowl” for the ice cream.

Optional Toppings:

  • Assorted Nuts ( Almonds, Pistachios, Cashews, Peanuts )
  • Gummy Bears ( Yes it works! )
  • Corn
  • Anything else you’d have on your normal scoop of ice cream

Cooking Directions:

  1. Get a large mixing bowl and add in all the ingredients, excluding the toppings, and mix thoroughly.
  2. At this point, if you’ve got an ice cream maker, simply put the mixture into the machine and churn it as per the machine’s instructions.
  3. Now if you don’t have an ice cream maker, get an ice cube tray and pour the mixture in and freeze the mixture.
  4. Once frozen, get a blender and blend the frozen ice cubes in a blender.
  5. Pour the blended mixture into a large mixing bowl and freeze for a few more hours to allow it to firm up.
  6. Get your coconut bowl and scoop several heaping amounts of ice cream and top off with your choice of toppings.
  7. Enjoy!

I’ve had this at the night markets in Thailand and was instantly hooked! Sweet and somewhat light, it makes for an amazing dessert!
